Ingredientes
1 xícara (chá) rasa de farinha de trigo (110 g)
4 paçocas esfareladas (60 g)
2 colheres (sopa) rasas de açúcar (24 g)
100 g de manteiga sem sal gelada cortada em cubos pequenos
3 gemas
3 colheres (sopa) de açúcar (60 g)
250 ml de leite
2 colheres (sopa) rasas de farinha de trigo (20 g)
5 paçocas
Açúcar de confeiteiro para decorar
Modo de Preparo
Folhado
Misture os ingredientes com a ponta dos dedos até formar uma massa homogênea.
Com o rolo, abra a massa entre 2 plásticos e trace quadrados de 6 cm com uma régua enfarinhada, sem destacar (utilize as aparas de massa também).
Cubra novamente com o plástico e leve à geladeira por 1 hora.
Com uma espátula enfarinhada, destaque os quadrados de massa e distribua em assadeira forrada com papel-manteiga.
Leve ao forno médio-baixo preaquecido (160 °C) por 17 minutos. Deixe esfriar sobre uma grade.
Creme de paçoca
Manualmente, bata as gemas com o açúcar por 5 minutos ou até esbranquiçar. Reserve.
Em uma panela, misture bem o leite com a farinha e as paçocas esfareladas.
Incorpore a mistura de gema e leve ao fogo baixo, mexendo sempre, por 5 minutos ou até engrossar.
Transfira para uma tigela, cubra com filme plástico em contato e leve à geladeira até esfriar (umas 2 horas).
Coloque o creme em saco de confeitar com bico liso e utilize.
Montagem
Intercale 2 quadrados de massa com o creme de paçoca e sobreponha mais um quadrado.
Decore com creme de paçoca e polvilhe açúcar de confeiteiro.
